Griffon Gastropub opens new brewery

YOUNGSTOWN, N.Y. — A decade after launching the Griffon Gastropub brand in Western New York, the owners are finally able to pour their own beer.

On Feb. 4, Ed Webster and Ken Scibetta opened Griffon Brewing, a 10-barrel craft brewery and tasting room at 200 Lockport St. in Youngstown. The goal is to supply their four restaurant locations in Niagara Falls, Lewiston, Clarence and East Aurora.

The brewery and tasting room, in the works since 2020, includes beer selections only available onsite, as well as a full bar. Beer is the focus, with plans for small batch imperial stouts, IPAs, sours and its own line of seltzers.

The venture fulfills a dream more than three decades in the making for the partners, who met while working at Water Street Landing in Lewiston, the waterfront bar/restaurant that now houses their Griffon Brewery & Gastropub site.
