Ingredients:
1 1/2 cups chicken broth
1/2 cup lentils
1/3 cup brown rice
1/3 onion (chopped)
1/3 stalk chopped celery
Macadamia nut oil
1 garlic cloves (minced)
Chopped chicken breast
2 chopped tomatoes
Few tablespoons pesto
Directions:
1. In a pot, cook celery with onions and garlic, coating the bottom in macadamia nut oil.
2. Add brown rice and lentils.
3. Add chicken broth and let simmer for about 45 minutes.
4. Add chopped chicken with tomatoes and pesto.
5. Allow to cook for a few minutes until fully heated. Serve.
