Ingredients:
1 tablespoon ground coriander
1 tablespoon paprika
1 tablespoon dried thyme
3/4 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon ground red pepper
4 (4-ounce) boneless center-cut loin pork chops (about 3/4 inch thick)
Cooking spray
4 lemon wedges
Directions:
1. Combine first 7 ingredients in a small bowl; sprinkle spice mixture onto both sides of pork chops and rub very gently into meat.
2. Place chops on rack of a broiler pan coated with cooking spray; broil 6 to 8 minutes on each side or until desired degree of doneness, 130 or 140 degrees for medium-rare. Be careful not to burn the spices, this can seriously ruin the meat's flavor.
3. Serve with lemon wedges. Trim off fat before eating!
