Caviar - Texas & Cowboy

I've made these recipes a few times now, and I have to say when I first read what the ingredients were, I wasn't impressed. After making them and trying these recipes however, I can say they are very good - and addictive! They not only are great appetizers, but they are very easy to make. Most of the ingredients you probably already have in the house.

Though there are many versions of these recipes, here's what I made:

Texas Caviar

1/2 cup apple cider vinegar
1/2 cup oil
1/4 cup sugar

Boil vinegar. Lower heat and add sugar. Stir until it dissolves. Cool. Add:

1 can corn
1 can black beans
1 can black eyed peas
1/4 cup minced celery
1/4 cup minced red onion
Dash of pepper

Serve with nachos OR, can be eaten without the nachos in a bowl/cup. Best when served cool.

Cowboy Caviar

1 can diced tomatoes
1 can black beans
1 can corn
2 avocados
Garlic Salt

Drain the black beans and corn. Mix all ingredients together. Can serve with nachos but it's good on its own too!
