Preparation Time: 30 minutes
4 chicken breasts, diced
1 tablspoon Greek flavored olive oil
1 pinch oregano
lemon juice for sauce, to taste, 1 teaspoon for marinade
1 sliced zucchini & 1 or 2 tomatoes
1 pinch dill
1 cup greek yogurt (used for sauce)
grated cucumber for sauce
1. In the fall season, its nice to stay lighter as we make the transition from our typically light summer dishes. Lemon marinades help keep the dish from getting heavy.
2. Place marinade (olive oil, spices and 1 teaspoon lemon juice) and chicken in plastic bag for 24 hours.
3. Grill zucchini and tomatoes with chicken and serve with cucumber, dill and yogurt with a bit of lemon juice for a tzatziki sauce.
