Using low fat cottage cheese makes this a healthy recipe, non fat cottage cheese tastes terrible and definitely isn't worth it.
Preparation Time: 40 minutes
1 cup low fat cottage cheese
1 cup ham (diced)
1 cup cheddar cheese (grated)
1 ½ cups small whole wheat bread cubes
1/4 cup jalapeno peppers (sliced, add more to taste)
1 1/2 green onions (chopped)
salt and pepper to taste
1. Preheat oven to 375 F and spray an 8-inch baking pan with non-stick spray.
2. Mix all ingredients in a large bowl.
3. Line bottom of pan with nonstick spray, then pour mixture into an 8 inch square baking pan.
4. Bake for about 25-30 minutes, or until the eggs are firmly set and golden brown on top and around edges. Serve warm.
